Chicory is the common name of Cichorium intybus species, from Compositae family.
Also known as: succory, endive, coffeeweed, blue dandelion, blue sailors.

Features of Chicory
Height to 12-48 inches. Spread to 18-24 inches. Zone 3-10. Perennial.

Growing Chicory
- growth: To produce chicons, dig up root in autumn of the first year, cut off the tops, bury in loam, water, and keep it in complete darkness for 4 weeks.
- thinning: 8 inches apart.
- transplant: 18 inches apart.
Chicory has been used as a medicinal and culinary herb since Ancient Egypt.
Leaves of the chicory are sometimes blanched by forcing it to grow in darkness, as this removes the bitter taste of the plant.
Roots of the herb can be dried and roasted to become a coffee substitute and additive, which is still popular in the Mediterranean region and India.

The root contains inulin (a form of sweetener) and is used as a coffee substitute. It is an ingredient in Mischkaffee, a German drink. (Use root)
