Miner's Lettuce is the common name of Claytonia perfoliata species, from Portulacaceae family.

Also known as: winter purslane, spring beauty, indian lettuce.

A native of North America, the leafy green was a source of vitamin C for the early settlers.

And prospectors during the California Gold Rush also ate the wild plant to prevent scurvy, hence the name miner's lettuce.

Although the taste is quite bland, miner's lettuce can survive near-freezing temperatures, making it a suitable salad ingredient in winter time.
